Rare Hare Willow Creek Vineyard Pinot Noir is handpicked solely from Willow Creek Vineyard, grown in the Mornington Peninsula's cool maritime climate.
Most of the grapes are destemmed, with a tiny portion left as whole bunches. They ferment in small open fermenters with gentle cap management to extract maximum colour and texture from the skins and seeds.
After a total of three weeks on skins, the wine is pressed and transferred to new and seasoned French oak barrels. Here it undergoes malolactic fermentation and 12 months of maturation.
Bright red, Rare Hare Willow Creek Vineyard Pinot Noir has spiced cherry and berry flavours framed by silky tannins and natural acidity. Cellaring potential is eight years.
